Vinification: Must inoculation by selected strains of dry active yeast. Fermented in stainless steel.Fermentation at low temperature (15 –17oC) from 10 to 18 days.
Wine description:
Kastropolitia is made from the selected grapes of the local varieties Kidonitsa and Monemvasia along with Roditis. These varieties are cultivated in the plain of Lakonia. Kidonitsa and Monemvasia are among others, some of the varieties that were used for the production of the famous wine of Malvasia. Monemvasia is also an aromatic variety. Its main disadvantage is the low acidity. For this reason it is blend it with the other two. Roditis gives the lemon and citrus flavors and the good structure. We found this blend to display the best characteristics of each.
Tasting notes: Light gold color, flower, apple, pear nose, crisp, long finish
