Greece has a long tradition in the production of tasteful and qualitative vegetables while several delicious dishes of the Greek cuisine have vegetables as their basic ingredient. As Matt Barrett places it in his travel guide to Greece “For some reason vegetables taste better in Greece than they do elsewhere”
Pickled vegetables are enormously popular around the world and they can be served as appetisers and as parts of main dishes. The Greek name for pickles is “Toursia” /gr:τουρσια/” and they are usually made out of carrots, celery, eggplants stuffed with diced carrots, cauliflower sun dried tomatoes, and green peppers. |
